Production Details The 2022 cuvée was bottled without added sulfur, neither fined nor filtered, and slowly matured in barrels with very light toast.
Tasting Notes Bright garnet with purple highlights; red fruit, violet and stony aromas, developing black cherry, raspberry, white pepper, dried rose, bark and graphite; a focused, dense yet delicate palate with lively acidity, fine tannins, mineral tension and a long floral-stony finish.
Food Pairing Roast pigeon with cranberries; veal with girolles and reduced red-wine jus; duck breast with truffled parsnip purée; Brie de Meaux, flower-coated Tomme or Saint-Marcellin.
