Production Details The approximately 80-year-old vines were entirely cultivated by Maison Edouard Delaunay. Grapes were handpicked at full ripeness, transported in small crates, carefully sorted and completely destemmed. Several days of cold maceration preceded indigenous-yeast fermentation, with daily pump-overs early in cuvaison and punch-downs toward its end. The wine matured for 17 months in fine-grained French oak barrels.
Tasting Notes Intense ruby-red; cherry, dark chocolate, orange zest, bergamot, iris, violet, blond tobacco, heather, licorice, vine peach, cocoa, Tonka bean and grey pepper; smooth and broad, with a fresh finish, complexity and depth
Food Pairing Rib steak with morel mushrooms or duck breast with figs
