Production Details The 2022 listing reports certified-organic wine and a white-wine method of whole-cluster pressing, spontaneous fermentation without sulfur, 12 months in predominantly used barrels followed by 6 months in tank, and lees maturation without bâtonnage. The official exact-wine sheet independently specifies manual harvest, whole-cluster pressing after crushing, light settling, fermentation without added sulfur in oak barrels, 12 months in oak with approximately 10–15% new barrels, and another 6 months in stainless steel. These non-day duration ranges are retained as stated. Finished wine is not sulfur-free: another exact 2022 listing states that it contains sulfites. Serving recommendations conflict at 6–9°C and 8–10°C.
Tasting Notes Neal Martin (Vinous; reviewed January 2024) describes yellow fruit, sea spray, linseed, chai tea, a taut and fresh palate, subtle stem ginger and a Meursault-like finish. A separate 2022 merchant note describes hawthorn, acacia, honeysuckle, toast and almond, with a silky, balanced, mineral and persistent palate.
