Production Details The fruit was sorted on two successive sorting tables and partially destemmed, then moved by gravity into temperature-controlled stainless-steel vats. Cold maceration lasted several days at 11–12°C. Indigenous-yeast fermentation was controlled below 32°C; total maceration lasted approximately 18–21 days. After pressing and one week of settling in vat, the wine was transferred by gravity to barrels and matured for 18 months in approximately 50% new and 50% one-wine barrels, on fine lees and without racking. The final blend was homogenized in stainless steel for 4–8 weeks before bottling without fining or filtration. The suggested serving range is 15–17°C.
