Production Details House-wide production practices applicable to the confirmed 2023 release: the wine is aged entirely on its lees, receives gentle bâtonnage a few times per month with frequency varying by vintage, and is not racked during maturation. The naturally cool, humid cellar delays malolactic fermentation until late summer. Bottling is performed by hand using gravity flow after a full moon, without fining, filtration, or an addition of sulfur at bottling.
