Production Details Grapes were harvested entirely by hand. Whole clusters underwent maceration and fermentation in a horizontal rotary fermenter, followed by 24 months of barrel maturation. The wine was produced at yields described as substantially lower than typical southern French wines and is the estate’s second wine based principally on younger vines.
