Production Details The 2021 CAVESA product page’s technical section, without expressly making every item vintage-specific, describes hand harvesting, partial destemming according to vintage, fermentation and maceration for about three weeks, and oak barrels comprising 20% new wood and 80% barrels aged two to three years; it reports an estate-site average yield of about 35 hL/ha. A separate exact-2021 vendor sheet specifies 18 months of maturation, split 50% barrel and 50% tank.
