Production Details The 2023 blends three parcels: a younger-vine parcel contributing acidity and two parcels with 50–60-year-old vines contributing ripeness and volume. Grapes were whole-cluster pressed and fermented in cask, with one-third new casks. A supplementary exact-vintage account describes indigenous-yeast fermentation in oak and prolonged maturation on fine lees, often using demi-muids or previously used barrels; it gives no exact ageing duration.
Tasting Notes Decanter (January 2025) describes lemony fruit, crisp acidity, ripeness and volume. Jasper Morris, tasting in October 2024, notes a clean lemon-yellow colour, ripe yet steely fruit, medium acidity and fine length. Vinous describes reduction, freshness, intensity, flintiness and a razor-sharp finish. Wine Advocate notes pear, white flowers, nutmeg, toasted hazelnuts, clear honey and a seamless, saline palate.
Food Pairing Crustaceans, fine fish, poultry with cream, and mushroom dishes
