Pressing Method Deep Pressing
Extended Maceration Yes
Production Details The 2008 reds were long-macerated, deeply pressed, kept with abundant lees and aged for a long, unspecified period on those lees without racking or sulfur addition during that élevage; barrels were topped with stored lees, and lees were still retained after 18 months. Malolactic conversion finished by late summer or September. The Hervelets lot comprised one barrel, equivalent under the article's stated convention to approximately 25 cases. The article reports alcohol generally just over 13% across both reviewed vintages, not as a Hervelets-specific finished-wine analysis. First selective racking was planned after the March tasting, with bottling anticipated between late spring and September; these were prospective rather than confirmed dates.
Tasting Notes Parker's March pre-bottling barrel-sample note: beetroot and bitter dark chocolate; a plush, texturally refined palate; subtle smoky and stony notes; and a satisfyingly long finish.
