Production Details The 28-hectare vineyard was planted at 5,000–7,000 vines/ha and tracked as 27 plots. Fruit was harvested mechanically or manually depending on plot and underwent two manual sorting operations on a vibrating table. Juice was settled before vinification; a 4–6 day cold soak at 5°C preceded fermentation, which began at 15°C and was stabilized at 25°C. Total vatting lasted 3–4 weeks, including a final 6–12 day maceration at 28°C. Maturation lasted 12–15 months on fine lees, using 30% new barrels and 20% one-year-old barrels selected from eight French coopers.
