Production Details Indigenous-yeast fermentation lasted one month. Temperature was controlled initially and subsequently allowed to proceed at its own pace. The wine stabilized naturally in stainless-steel tanks during winter; the vineyard soil pH was reported as 7.8–8.3. No chaptalization was used, and bottling occurred before summer to preserve natural carbon dioxide.
