Production Details Manual harvest. Grapes pressed whole in pneumatic presses for approximately 7 hours. Natural settling (débourbage). Spontaneous fermentation with indigenous yeasts in centennial oak foudres. Aged on fine lees for several months until bottling (typically July). Filtered prior to bottling.
