Production Details At the producer’s early-June 2018 tasting, the 2016 whites had not been racked or sulfured; bottling was subsequently planned for October–November 2018. The importer’s house-method description says the wines are aged entirely on their lees with gentle bâtonnage several times monthly, without racking during that process. The naturally cool, humid cellar delays malolactic fermentation, while naturally retained CO2 permits limited SO2 use. Bottling is performed manually by gravity feed after a full moon, with no fining, filtration, or sulphur addition at bottling.
Tasting Notes Stephen Tanzer’s early-June 2018 barrel-stage assessment described the wine as extremely unevolved, somewhat dry, and showing little flavor development at that time.
