Production Details Alko lists acids at 6.5 g/L but does not state the analytical acid-equivalent basis, so this is not proposed as an unqualified total-acidity value. Its generic white-wine serving guidance is 10–12°C; the range is retained here rather than converted into a single serving_temp_c value.
Tasting Notes Luminous appearance with a pronounced green reflection; chervil, dill, verbena, marjoram, cold vegetable soup, potato, leek, turnip, cauliflower, pear, apple, parsnip, anise, mint and quince. The juicy palate shows spiced apple and pear, apricot, peppery marmalade, spiced orange, lemon, clove, cardamom, liquorice, ginger, juniper, Sichuan pepper, saffron and chilli, with an intense, persistent finish. Alko separately characterizes the wine as straw-yellow, dry, acidic, mineral, citrus- and yellow-plum-scented.
Food Pairing Producer suggestions: razor-clam gratin with parsley butter, pan-fried scallops, cockles or clams; after two years, cod or pollock Parmentier. Alko additionally recommends fatty fish, chicken or turkey, soups, crayfish, clam dishes and blinis.
2022 Technical Specifications
Region Hautes Cotes de Beaune
Tasting Notes Bright light gold with a delicate green hue; spring grass, white flowers, daffodils, blossoming trees, honey, wet earth, clay and a gunpowder-like mineral note. The silky palate shows layered citrus, mildly bitter orange, clementine, pomelo, liquorice, lettuce, apple-and-pear coulis, marmalade, apricot jelly and green cardamom, finishing long, balanced and refreshingly bitter.
Food Pairing Pairings comparable to those proposed for the producer's Aligoté, potentially with stronger pepper or spices such as clove or cardamom and inspiration from Cambodian or Thai dishes
