Production Details The cuvée comes from vines planted between 1969 and 1973 and is described as organically farmed. Extraction is moderate and no sulfur is added during vinification. Maturation takes place in barrels for 12 months with very little new oak and without racking; each cru is assembled in vat before bottling, with no fining and only very rare filtration. A supplementary 2023 domaine-wide note reports picking from 4–11 September, 12 days of vinification, fairly early malolactic fermentation, and 12.5–13% alcohol across the range; those dates and alcohol figures are contextual range-wide observations, not exact Champ analytical values.
Tasting Notes Fresh cranberry, red cherries, red-to-purple floral notes, meat-rub spice and earthy mineral notes. Neal Martin’s Vinous barrel assessment adds raspberry, wild strawberry and crushed stone, with a medium-bodied, taut, focused palate, lace-like tannins, salinity and an airy, lengthy finish; rated 90–92 points.
Food Pairing Game, rib steak, lamb, fillet of pikeperch or tuna in red-wine sauce, and strong cow-milk cheeses
