Production Details The sources disagree on part of the 2022 specification. Mottox reports spontaneous fermentation in stainless steel with 50% whole bunches, malolactic fermentation in oak, then 12 months in 228 L French oak (20% new) and four months in stainless steel. Amitié instead reports 50–60% whole clusters, slow fermentation in a large cement vessel with very little pumping over and gentle punch-downs, followed by 12 months in two-, three- and four-year-old wood. Fruit was subjected to exacting sorting. Mottox also describes the wine as biologically farmed but without certification.
Tasting Notes Raspberry, red cherry, floral lift, spice and orange peel; focused structure, fine-grained tannins, vibrant acidity and a long mineral finish.
