Production Details The blend comes from Gevrey parcels planted between 1950 and 1980. Fruit is hand-harvested; vineyard treatments exclude herbicides and pesticides and use only copper and sulfur. Fermentation is conducted in open vats with native yeasts and no additives apart from a small sulfur addition after malolactic fermentation. The wine is matured in French oak, with new oak capped at 15%, and bottled without fining, filtration or enzyme additions.
