Production Details Comptoir des Millésimes describes manual harvesting, sorting on the vines and at the winery, pneumatic pressing, slight settling, alcoholic and malolactic fermentation with indigenous yeasts and bacteria in 228 L French oak barrels with 15% new oak, and 18 months on fine lees without bâtonnage. It reports transfer to stainless steel one month before bottling, followed by racking, fining, light filtration and lunar-calendar bottling.
