Production Details The producer identifies 2015 as the first Sacré Graal vintage and explains that it was the single cuvée made when harvest and volume did not permit separate parcel bottlings from Moriers and Chapelle des Bois. CAVE's exact-2015 technical section reports biodynamic cultivation; complete soil work and manual vineyard labor; goblet-trained vines on stakes; planting density of 10,000–14,000 vines/ha; yields never exceeding 35 hl/ha; normally whole-cluster, semi-carbonic Beaujolais fermentation; no chaptalization except exceptionally; long maceration; at least 24 months' maturation in new and one- or two-wine pièces and demi-muids made from Bertranges and Tronçais wood; and bottling with a manual filler. The reported oak maturation conflicts with the producer's historical page, which says the 2012 vintage marked the disappearance of wood; the exact 2015 maturation vessel therefore remains unresolved.
