Production Details A 3.6-hectare blend of four parcels with vines averaging 30–40 years. Vinification included four days of cold pre-fermentation maceration, natural-yeast alcoholic fermentation in concrete, one or two pump-overs daily, punch-downs only near the end of fermentation, and five days of post-fermentation maceration. Malolactic fermentation occurred in wooden barrels, followed by 12 months of maturation with 0% new barrels.
