Indigenous-yeast alcoholic fermentation and malolactic fermentation occurred in 500 L French-oak barrels, 10% new. Maturation lasted 15 months on fine lees without bâtonnage. The wine was lightly fined and filtered, then bottled on a root day according to the lunar calendar.

Production Details Made from vines more than 50 years old. Grapes were selected in the vineyard and at the winery, gently pressed and settled, then fermented with indigenous yeasts in 500 L French-oak barrels, 10% new. The wine spent 15 months on fine lees without stirring, was lightly filtered, and was bottled according to the lunar calendar. Vinmonopolet separately reports finished-wine sugar below 3 g/L and acidity of 4.7 g/L; the acidity basis is not stated, so neither measurement is promoted to an unqualified canonical analytical field.
Tasting Notes Straw-yellow; focused, youthful apple and citrus aromas; dry and full-bodied with a fresh mid-palate and long finish. A separate 2021 merchant description adds aromatic purity, buttery notes and minerality.
Food Pairing Fish, shellfish and white meats
