Vineyard work included Guyot-Poussard pruning, green pruning in May and August, high 1.4 m trellising, low yields, organic compost when needed, lutte raisonnée and soil cultivation approximately four times annually.

Classification Saint-Aubin Premier Cru
Region En Remilly
Soil Calcareous marl in the parcel near les murgers des dents de chien; stony, Thinner and strongly calcareous soil in the higher parcel toward la châtenière.
Orientation South-Facing
Sites Nearly two hectares divided between two south-facing parcels: one near Les Murgers des Dents de Chien on calcareous marl, and a higher, stonier, thinner and strongly calcareous parcel above Chevalier-Montrachet toward La Châtenière.
Serving Temperature 12°C · 54°F
Production Details Farmed according to organic principles. April frost severely reduced the 2021 crop; the source says the final yield barely reached 5 hL/ha, approximately 90% below a normal harvest. Because the figure is qualified as approximate, it is retained here rather than emitted as an exact numeric yield.
Tasting Notes Pale gold with green highlights; mineral and fresh, showing flint, gypsum, juniper, shell, pear, white peach, tart yellow plum, orange zest, almond paste, fresh bread, verbena, chervil and mint. Energetic and lively palate with citrus, white fruit, passion fruit, pink-pepper and Sichuan-pepper accents, followed by a long saline finish.
Food Pairing Flambéed langoustines with chanterelles, or salt-crusted line-caught sea bass with beurre blanc and samphire.
