Production Details The 30–65-year-old vines were Guyot pruned; severe spring debudding regulated the crop and a summer green harvest promoted quality and maturity. After a 48-hour cold maceration, fermentation ran in stainless steel at 30°C for 12–15 days. Following gentle pressing and combination of free-run and press wine, the wine was transferred by gravity to French oak barrels, 30–50% new, underwent malolactic fermentation, matured for 14–16 months, and was bottled without filtration.
