Production Details The importer describes a 0.06-hectare parcel with vines aged 40–80 years. Vinification used 60% whole bunches, four days of cold maceration, natural-yeast alcoholic fermentation in concrete, one or two pump-overs daily, pigeage only at the end of fermentation, and seven days of post-fermentation maceration. After malolactic fermentation, the wine spent 15 months in barrel, including 30% new oak, and was neither filtered nor fined.
