Production Details The 2022 release is sourced rather than estate-grown; the importer reports practising-organic viticulture and an elevation range of 210–250 metres. Wivood describes hand harvesting, whole-cluster fermentation in conical vats with indigenous yeasts, gentle extraction for 2–3 weeks, and maturation for 12–18 months in used 228-litre Burgundy pièces with no new wood. Buveur de Vin independently says Athénaïs purchases the Pinot Noir for this cuvée and describes 18 months of barrel maturation.
Tasting Notes Fragrant sour cherry, raspberry, redcurrant, red flowers, light spice and earthy nuances; structured and elegant, with fine tannins, measured ripe fruit, lively acidity and a long finish.
Food Pairing Duck breast, braised beef, poultry with mushroom sauce, veal chops, mushroom risotto, soft cheeses such as Brie, Camembert or Époisses, and classic Burgundian cuisine.
