Production Details The importer specifies 50% whole-cluster fermentation, barrel maturation and vines more than 55 years old. Jasper Morris additionally reports early picking and tressage; his phrase “12% natural plus a bit added” is retained as harvest/chaptalization context and is not treated as finished-wine alcohol.
Tasting Notes Wine Advocate barrel-sample note: raspberries, orange zest, exotic spices and petals; fleshy and lively, with fine structuring tannins. Jasper Morris notes strawberry, rose petals, balance and a slightly austere finish.

Production Details The Pillot parcel lies in the heart of the original Clos Saint-Jean. The cited section is 2.2 hectares; Pillot owns just over one hectare, divided equally between Pinot Noir and Chardonnay. The 2022 red was made with 100% whole bunches, worked only by foot for approximately 10 days, and the vines were trained using tressage.
Tasting Notes Jasper Morris: griotte cherries, crushed strawberries, strong fruit intensity, weightlessness and a fresh acidic finish.
