Production Details The 2023 release comes from a small walled monopole near the Volnay border, south of Les Santenots; its Pinot Fin vines were planted in 1949 and yielded under 25 hl/ha. The exact-vintage CAVESA technical listing describes 18–22 months of élevage in a very cool cellar, no more than 20% new oak, and filtration before bottling only if necessary. Fleet Street additionally describes manual harvesting, no added yeast or enzymes, no racking, cold and very slow fermentation, and late malolactic fermentation for this wine.
Tasting Notes William Kelley, The Wine Advocate (2023 barrel review): smoked duck, burning embers, dark berries, orange and spices; medium- to full-bodied, fleshy and succulent, with powdery tannins and a discreetly carnal finish.
Food Pairing Roast pigeon; Bresse duck with cherries; sautéed sweetbreads
