Production Details The wine comes from two hectares of south-facing terraced vines on the Semons hillside, planted at 8,000–10,000 vines per hectare. The vineyard receives no insecticide, treatments are limited according to weather, fertilizer use is very low and exclusively organic, and vigor and yields are controlled through leaf thinning and green harvesting. Grapes are harvested by hand, then sorted, crushed and partly destemmed for parcel-by-parcel traditional vinification. The wine matures for 18 months in barrels.
Tasting Notes Seductive and fruity, with red and black fruits, sweet flowers and spice; mineral freshness, a velvety palate and delicate tannins.
Food Pairing Delicate but characterful meats, including confit lamb shank or spiced pigeon.
