Production Details Produced essentially from whole bunches, with maceration for around 20 days, followed by 22 months in barrels, 15% new.
Tasting Notes Dark ruby-purple; blackcurrant, ripe plum and blackberry; violet, lavender, pepper, clove, cedar and light smoke; powerful and elegant, with balanced acidity, supple tannins, black pepper, bitter chocolate, minerality and a long finish.
Food Pairing Grilled lamb, game, spiced pigeon, duck breast, turkey with chestnuts, rabbit or hare stew, steak or roast beef, and moderately flavoured hard cheeses; avoid strong or very creamy cheeses.
