Production Details For the current 2020-base non-vintage release, the base wine was fermented in stainless steel without malolactic fermentation and spent at least two years sur lattes before disgorgement. The producer specifies exclusively manual harvesting, whole-bunch pressing and second fermentation in bottle, and recommends service at around 8°C. Oz Wine Company additionally reports indigenous-yeast vinification, organic farming and vines more than 20 years old. Alko reports acids of 6.4 g/L but does not state their analytical basis, so that figure is not proposed as unqualified total acidity. Oz's undated 12–24-month lees-ageing statement was not treated as the duration of the specifically identified 2020-base release.
Tasting Notes For Le Sommelier's current 2020-base NV release: crisp green apple, bright lemon, fresh almond, meringue and a saline finish
Food Pairing Nuts or charcuterie as an aperitif; also suitable for a rich afternoon snack
