Production Details Diony NV release: fruit came from a 1.5-hectare estate parcel; after stainless-steel base-wine fermentation and maturation, tirage was followed by 18 months of secondary fermentation and bottle maturation sur lattes, then disgorgement. Gas pressure was 7.1 atmospheres and total SO2 was below 6 mg/L. The current Canadian release differs by using old oak for base-wine fermentation and winter maturation, followed by spring bottling with yeast and sugar, 18–30 months on lees (approximately two years for that release), disgorgement and a typical dosage below 2 g/L. An archived unnumbered release used Chardonnay planted in 1983, old-oak base-wine fermentation and more than two years on lees.
