Production Details Rigorous selection followed by short maceration; maturation takes place entirely in stainless steel with no wood. Finished-wine sugar is reported as less than 1 g/L, so it is retained as a bound rather than an exact residual-sugar value. Recommended serving temperature is 10–12°C depending on the season. The wine is bottled under protective atmosphere.
Tasting Notes Clear, bright garnet-tinged color; complex, elegant aromas of red fruit and cherry with a spicy touch; lively attack, silky tannins, balanced structure, length and harmony.
Food Pairing Tapenade, rillettes and charcuterie; savory buckwheat crêpes, croque-monsieur, quiche Lorraine, beef tartare, veal blanquette and pot-au-feu; grey shrimp, oysters with shallot vinegar, and smoked-fish sashimi.
