Production Details The grapes are harvested entirely by hand. Alcoholic fermentation proceeds under precise temperature control, and malolactic fermentation takes place in barrels. Maturation lasts less than one year in French-oak barrels, including some new barrels. The producer page also states that the wine is bottled under protective atmosphere and that the source parcels are HVE-certified. The technical sheet reports sugar below 1 g/L. Serving-temperature guidance conflicts: the technical sheet recommends 12–14°C, while the current producer page recommends 10–12°C.
Tasting Notes Clear, bright ruby appearance; complex, harmonious aromas of red and black fruit with Mourvèdre-associated mineral, woody, vanilla and lightly spicy nuances; balanced and generous palate with silky tannins, good structure and an elegant finish.
Food Pairing Characterful dishes; sweet-and-sour Asian sauces; duck; Japanese-style fried fish; Indian food such as chicken tandoori; and Provençal leg of lamb.
