Production Details Grapes are hand-harvested in the morning, optically sorted, softly crushed and rapidly cooled. Fermentation and maturation take place entirely in new 600 L French-oak barrels for approximately 11 months, with lees stirring twice weekly. Recommended serving temperature is 12–14°C.
