Production Details Following an early-morning manual harvest, the grapes are destemmed and directly pressed. Fermentation begins with native yeast in temperature-controlled stainless-steel tanks; the fermenting must is then transferred to 300 L French oak barrels, where fermentation finishes with daily bâtonnage. The wine remains on fine lees in the same barrels for 8–10 months and is then aged for one year in bottle.
