Production Details Manual harvest. Alcoholic and malolactic fermentation took place partly in barrel and partly in tank with indigenous yeasts. The source's maturation descriptions are internally inconsistent: its specification says 50% oak barrels and 50% stainless steel, while its narrative says 11 months in barrels on fine lees with very little new oak. It also gives conflicting serving recommendations of 11–12°C and 9°C; no canonical serving-temperature value is proposed.
Tasting Notes Tense and mineral, with fresh apricot, lily, ginger and orange-zest descriptors and an unctuous palate.
Food Pairing Seared scallops with saffron emulsion and young leeks
