Production Details Fruit came from the Poncins lieu-dit in Saint-Michel-sur-Rhône. After direct pressing, the must was rapidly chilled and gross solids settled before indigenous-yeast alcoholic fermentation in oak. Élevage lasted 10–16 months in barrels, approximately 30% new and 70% three-to-five-year-old, without racking on fine lees; regular bâtonnage continued for 6 months. An additional 4–7 months in stainless steel could supplement maturation. The cuvée was assembled from barrels. Recommended serving temperature is 10–13°C.
Tasting Notes Bright straw-gold; white flowers, candied citrus, lemon zest, exotic fruit, honey and subtle vanilla; rounded and generous yet fresh and precise, with balanced richness, minerality and a long finish.
Food Pairing Provençal-style sea bream, salmon roulades, cold asparagus with mousseline sauce, fine white fish, buttered shellfish, poultry in cream sauce, foie gras, or citrus desserts such as lemon tart.
