Production Details The importer describes a 0.45-hectare parcel in Brochon, between Gevrey-Chambertin and Fixin, with vines stated as 30–40 years old and separately as planted in 1980. Vinification comprised four days of cold pre-fermentation maceration, indigenous-yeast alcoholic fermentation in concrete, one to two pump-overs daily, punch-down only at the end of fermentation, and five days of post-fermentation maceration. Malolactic fermentation took place in wooden barrels, followed by 12 months of maturation with 0% new oak.
