Production Details The current producer page says Yellow Label is assembled from 50–60 crus with up to 45% reserve wines, selected from a collection of 400 reserve wines aged for as long as 30 years; it recommends serving at 8–10°C and gives an ageing potential of 3–5 years. A specialist seller’s exact-wine sheet, without a defined release date, additionally reports manual harvesting, whole-bunch pressing, settling for 15–24 hours, separate 8–10-day fermentations by grape variety and harvest in stainless-steel vats, malolactic fermentation, 25–40% reserve wine and 30 months stacked on laths in chalk cellars. That older/unspecified 25–40% reserve-wine specification is retained separately from the producer’s current ‘up to 45%’ figure. A trade wholesaler’s 750 ml listing for EAN 3049614222245 reports acidity of 5.4 g/L without stating its analytical basis, so it is not proposed as canonical total acidity.
Tasting Notes Brilliant golden yellow with fine, persistent effervescence; pear, apple, peach, mandarin, grapefruit and brioche, followed by pastry and dried-fruit notes; structured, fresh, aromatically rich and silky.
