Production Details BAM! comes from massal selections of Pinot Blanc, Arbanne and Petit Meslier preserved side by side in 2003. Vineyard work includes natural inter-row cover, shallow cultivation beneath the row, herbotherapy, Poussard-method Chablis pruning, green manure and natural fertilization. For the base-2012 release, grapes were gently gravity-pressed, primary fermentation was spontaneous in Burgundian oak barrels, and the wine spent six months on harvest lees; malolactic fermentation was not induced, and the wine was neither filtered nor clarified. A parcel-specific perpetual reserve has been maintained since 2007. The exclusive importer records a later lot of the same base-2012 blend disgorged on 3 June 2024 after 11 years 2 months on bottle lees.
