Production Details The current producer sheet describes roughly a dozen parcels vinified separately, with 30% of the cuvée aged in large oak casks and reserve wine varying to maintain the consistent house style. It states five years of cellar ageing. Kobrand describes this as five years on the lees. A distributor sheet additionally states one year of rest after disgorgement and recommends serving at 8–10°C. Taittinger’s official visitor menu is internally inconsistent on maturation: its English entry says at least five years, while its French entry says at least six years; therefore no exact ageing-days claim is proposed.
Tasting Notes Deep yellow with golden highlights and fine bubbles; intense peach and apricot-compote aromas with toasted brioche and vanilla; generous, smooth, fruity palate dominated by yellow peach; pronounced, lightly woody finish
Food Pairing Cheeses, porcini-mushroom risotto, mushrooms, white meats in sauce, roasted meats and fish in sauce
