2016 Technical Specifications
Grape Varieties 100% Chardonnay
Classification Grand Cru
Region Champagne
Harvest Dates Picking began 10 September 2016
Sites Grand Cru fruit from Oiry, Chouilly, Cramant, Avize, Oger and Le Mesnil-sur-Oger in the Côte des Blancs
Fermentation Vessels Stainless steel vats
Pressing Method Grapes Were Quickly And Gently Pressed
Production Details The must received two settlings: one immediately at the press house and a second cold settling in stainless steel over 24 hours. Slow, cool fermentation occurred in stainless steel with crus kept separate until final blending. Secondary fermentation and maturation took place 33 metres underground, followed by hand riddling and at least six months of post-disgorgement rest before shipment. The specialist trade page is internally inconsistent about the current 75 cl release's ageing: its prose says seven years in the cellars, while its Technical Information says six years on lees. That release is reported as disgorged in June 2024 with 7 g/L dosage; these release-scoped figures are not generalized to every disgorgement of the vintage.
Tasting Notes Crystal clear with silvery tints and delicate bubbles; chalk, flint, white flowers, yellow cherries, dried nuts, citrus, exotic fruit and cocoa butter; crisp, delicate texture with pronounced minerality, lemon and orange zest, toasted notes and a long saline finish

The producer-formatted 75 cl release sheet reports dosage of 7 g/L. It also records average harvest-must potential alcohol of 10.4% vol and approximate must total acidity of 7.1 g/L as H2SO4 equivalent; these are must measurements, not finished-wine alcohol or total acidity.
