Production Details The cuvée incorporates 25% reserve wines. Must receives an initial settling at the press house and a second cold settling at the winery at 6°C for 24 hours. Alcoholic fermentation occurs at 18°C, with each variety and village kept separate until final blending. After blending and bottling, secondary fermentation and maturation occur in cellars 33 metres below street level. The cuvée remains in the cellar for a minimum of four years, is hand-riddled, disgorged and dosed, then rests for at least three months before release. Separately, Stephan Reinhardt's June 2018 review concerned an NV bottling based on the 2012 harvest and disgorged in July 2017; that bottle-specific date is not generalized to the NV wine.
Tasting Notes Yellow-gold with a copper shimmer and fine, persistent bubbles; dried fruit, floral fragrance, woody hints, gentle vegetal notes and spice; ample, powerful and supple, with succulent fruit, sweetness, blond caramel and a fresh, long finish
Food Pairing Sweet and savoury dishes
