Production Details The must receives an initial settling at the press house followed by a second cold settling at the winery at 6°C for 24 hours. Alcoholic fermentation occurs at 18°C, with each grape variety and village vinified separately until final blending. Secondary fermentation and maturation take place in cellars 33 metres below street level. The selected ageing period is at least four years; bottles are traditionally hand riddled and rest for at least three months after disgorgement before release. Vinetum additionally reports acidity as 6.8 g/L but does not identify its analytical basis, so that observation is not mapped to total_acidity_gl.
Tasting Notes Golden, dense and shining; tiny bubbles; clove flowers, rose, bread crumb, yeast, citrus and lemon; lively and fresh; firm, structured and fine; honey and clove on the finish
Food Pairing Naturally prepared firm, delicately sweet shellfish, including crayfish, lobster, crab or rock-lobster salad with olive oil and hazelnut vinegar
