Production Details The blend uses 25% reserve wines. Must receives an initial settling at the press house and a second cold settling at the winery at 6°C for 24 hours. Alcoholic fermentation takes place at 18°C, with varieties and village lots kept separate until final blending. Following blending and bottling, secondary fermentation and maturation occur in cellars 33 metres underground. The producer describes four years of cellar aging, traditional hand riddling before disgorgement and dosage, and at least three months of rest before release. Graft's current unidentified NV release lists 12 g/L dosage, while an April 2016 Frederick Wildman distributor sheet reported an average dosage of 8 g/L for the White Label; this indicates release-era variation, and the historical figure is not treated as a second vintage-wide dosage claim because neither source identifies an encodable numbered edition or exact lot.
Tasting Notes Golden straw color; abundant fine bubbles; pear, mango, honeysuckle, white jasmine, vanilla and brioche; cooked quince, apricot jam, beeswax and acacia honey; candied orange peel, tangerine, cardamom and anise; fresh, structured and persistent.
