Production Details The general cuvée comprises base wines from Le Mesnil-sur-Oger, Oger, Cramant and Avize plus about 20% perpetual-reserve wine; the importer expresses the proportions as 75–80% base wine and 20–25% reserve wine. Whole bunches are harvested by hand. The perpetual reserve, initiated in the late 1990s using the 1988, 1990, 1993 and 1996 harvests, is maintained across large wooden foudres, concrete, stainless-steel and cement vats. The finished cuvée receives a minimum of 36 months on lees before release. Release-specific context: a 75 cl trade listing identifies a 2018 base with 20% reserve wine and a November 2022 disgorgement; that disgorgement is not generalized into a vintage-wide canonical date.
Tasting Notes Floral and smoky, developing white peach, citrus peel and toast; white fruit, candied lemon, mandarin zest and toasted hazelnut on the palate; chalky, saline and iodine-like finish
Food Pairing Risotto or rich fish dishes
