Production Details This is a non-vintage Champagne; “mise en cave” years are cellaring/release identifiers, not harvest vintages. Mise en cave 2018 uses 30% reserve wines from a collection of more than 150 cru-by-cru wines kept on fine lees; it was cellared in 2018, aged at least 36 months on lees and at least 6 months after disgorgement, and has Extra Brut dosage of 5 g/L. Disgorgement is bottle-specific and printed on the back label. Grapes are hand-harvested at full maturity; juice undergoes static clarification, fermentation in temperature-controlled stainless steel with selected yeasts, and malolactic fermentation is largely predominant but decided case by case. The house reports limited use of oenological inputs, including sulfites. The serving recommendation is 10–12°C. Archived producer sheets document release variation: mise en cave 2017 has 30% reserve wine and 6 g/L dosage; 2015 has 35% reserve wine and 4 g/L dosage; 2014 has 35% reserve wine and 4 g/L dosage. Each archive sheet specifies at least 36 months on lees and at least 6 months after disgorgement. Liberty Wines’ undated NV PH103 listing reports 35% reserve wine, full malolactic fermentation, 40 months on lees, 4 g/L dosage and acidity of 6.3 g/L without stating the analytical basis; because that listing does not identify its mise-en-cave release, these specifications are not assigned to the current 2018 release.
