Production Details For the base-2021 release, 56% comprised previous harvests aged in wood, and 27% of the wines from the 2021 harvest were produced without malolactic fermentation. For the base-2020 release, the corresponding figures were 39% previous harvests aged in wood and 23% of the 2020-harvest wines produced without malolactic fermentation. Reserve wines are re-blended and renewed annually; part is kept in oak barrels and tuns until the next harvest, while since 2012 another part feeds the slower-renewing Réserve Essentielle. The base-2021 sheet specifies at least three years on lees at 12°C, while the base-2020 sheet specifies at least three years at 11°C; the current producer wine page describes the general cuvée as spending three to four years on lees in bottle.

Food Pairing Aperitif; white meats, poultry and fine charcuterie served hot or cold; cold buffets, fish and seafood.
