Production Details Base-harvest 2021 release: 53% consists of wines from earlier, individually unidentified harvests aged under wood. Vinification was in tank and under wood, with 13.8% under wood; 25% of the wines from the 2021 harvest did not undergo malolactic fermentation. Still red wine and saignée rosé made by macerating Pinot Noir from Mareuil-sur-Ay and Les Riceys account for 7–8% of the blend. The wine was aged on lees at a constant 12°C for three to four years. Fruit was first-press and came from the heart of Champagne, with a majority from Grands and Premiers Crus.
Tasting Notes Salmon pink developing copper highlights; fine, creamy and persistent mousse. Aromas of red fruit, cherries and wild strawberries, followed by citrus and grapefruit peel. Elegant, pure attack; full and ample palate with lively acidity and slight astringency emphasizing the fruit.
Food Pairing Smoked fish; smoked meats including ham and bacon; pink meats including veal and lamb; red-berry desserts; also suitable as an aperitif.
