Production Details The producer's food-pairing page states 21 months of cellaring followed by 3 months of aging after disgorgement. Enotria's NV sheet specifies the classic Champagne method, bottle fermentation and 21 months on lees. Current producer serving guidance is 10–12°C in tulip-shaped glasses. Dosage documentation is time/release-sensitive: the current producer page states 7 g/L, the producer food-pairing page states a 7–9 g/L range, and Enotria prints “9 grams of dosage” without explicitly stating a per-litre basis.
Tasting Notes Glowing pink with amber highlights; lively red-fruit aromas of wild strawberry, raspberry and cherry, rose florality and pepper; persistent strawberry, raspberry and redcurrant flavors with peach, menthol and gooseberry nuances.
Food Pairing Sushi, oysters, grilled summer peaches and soft creamy cheeses; the producer's dedicated pairing page additionally recommends raw or lightly grilled red meat, summer vegetables, rock fish, shellfish bisque, fresh herbs and tart red berries.
